Kale storage and preservation technology

Kale is a specialty of Guangdong and its main producing area is in the Chaoshan area. The edible part of the kale is a leafed lettuce, similar to the vegetable core of Guangzhou. Because kale contains many starches, it does not taste as soft as the core, but it is very crisp and unique. Kale has become a very popular dish in the banquet because of the green color. Kale is also one of the vegetable varieties exported to Southeast Asia.
The most probable problem in the storage and transportation of kale is the hardening of the meat and flower buds. This is also an indication of aging. The most effective way is to reduce the temperature and prevent the growth of the flower moss during its storage and transportation. Kale is not afraid of cold, so it is suitable for low temperature preservation without the use of antiseptic agents. As a storage or export of kale, the processing flow is as follows:
Harvested with young buds, but the height of the flower moss can not exceed the height of the blade. Early morning harvesting, gloves, iron nails, or cutting vegetables with a knife, gently put into the basket, shipped back to the processing field, need to be pre-cooled but not soaked in water cooling. The ideal is vacuum cooling. Exporting kale is commonly used vacuum pre-cooling, the best preservation effect. In this way, it can be pre-cooled after packaging to facilitate operation. If there is no pre-cooling device, you can also put the kale into the cold storage, store the temperature at 0 °C, continuous boot, the next day when the temperature drops down and then packed in a basket, 0.03 mm thin film, or waterproof carton packaging. The temperature is controlled at 1-2°C and the relative humidity is 95-98%. If the quality of kale is good, the storage and transportation period is one month. Except for a slight light consumption, the product rate is 100%, no flowering, no budding, and normal flavor.
It is worth noting: First, the kale after harvest should not be over-water. This is the key to keeping the soft and refreshing texture. Second, the leaves of kale have a special layer of wax, which prevents pests in the field and does not require antiseptic treatment after harvesting. Third, it is advisable to add crushed ice to reduce vegetable temperature during short-distance transportation. However, the crushed ice must not be in direct contact with the leaves, otherwise the leaves will be “scalded”, become soft green, easily rot, and lose their value.

Compressed air is purified through the air dryer and filters to a certain level for main plant to work with. Air buffer is incorporated for smooth supply of compressed air thus to reduce fluctuation of compressed air source. The plant produces oxygen with PSA (pressure swing adsorption) technology, which is a time proven oxygen generation method. Oxygen of desired purity at 93%±3% is delivered to oxygen buffer tank for smooth supply of product gas. Oxygen in buffer tank is maintained at 4bar pressure. With an oxygen booster,  the oxygen pressure can reached to 15Mpa and fill in cylinders.
