Application of sodium alginate in granular suspension beverage

A particulate suspension beverage is a liquid-solid biphasic beverage that has appeared on the market in recent years. Early particle-suspension beverages were made by adding natural fruit granules to the beverage, which is also called fruit beverage. This beverage has a good decorative and chewing taste and is widely welcomed by consumers. The production of natural fruit drinks is seasonal, complex, and costly, which has promoted the development of artificial granule beverages. Sodium alginate is a natural water-soluble colloid, which has synergistic effect with various colloids such as carrageenan, agar and konjac. The artificial fruit and vegetable granules made by using the unique cold gel and hot irreversible gel property of sodium alginate have strong water retention property and are suitable for traditional processes such as heat sterilization, and are not only tasteful and brittle, but also have good stability during the shelf life. The taste is soft and harmonious, sweet and sour, and has no odor, which plays an irreplaceable role in other water-soluble colloids.

Production process of granular suspended beverages:

1. Sol: 1-1.5% sodium alginate and 50% white sugar are thoroughly mixed, dissolved in water, and fully dissolved.

2. Juice: The concentrated juice and the glue are thoroughly mixed according to the ratio of 1:3, and the bubbles are removed by standing. Curing solution: 1-2% calcium lactate or calcium gluconate solution.

3. Drop the mixed solution of the glue and the juice into the solidified liquid to form solid fruit pieces in about 5-10 minutes. Adjust the size of the droplets and the height of the drops to control the size of the fruit pieces.

4. Sterilization: Instant sterilization is carried out at 93-96 °C. The finished product is cooled to 35 °C immediately after pasteurization, otherwise it will affect the quality of the finished product.

5. The finished product can be adjusted into different beverages.


The fruit particles suspended in the beverage not only make the beverage have a vivid and intuitive sense, but also enrich the taste and flavor of the beverage, improve the nutritional value of the beverage, and gain the recognition of the consumer.
